Italian inspired, this Cucumber, Tomato and Chickpea Salad are one of my favorites. I don’t know why they’re called chickpeas, but it’s a cute name, so I’ll take it. This is a healthy salad, as well as a balanced combination of carbohydrates, fats, and proteins. The most amazing thing is that all these veggies are available in every season. It’s a great side dish for travel and gathering, And alongside chickpeas is also the best source to lose weight.
They are a rich source of vitamins, minerals, and are high in protein.
Not only look so pretty or vibrant when serving, but it also tastes amazing! It’s a quick and easy salad when you don’t have a lot of time. The best part about this chickpea salad is, it takes a few minutes to make, there’s no need for cooking, only one bowl steamed chickpea is enough to make it.
It’s such a healthy option to eating crispy cold veggies on a hot day.

To make this recipe, you need steamed chickpeas and including all the chopped veggies.
Add all the above ingredients to a bowl, Whisk them well for the dressing. Add some lemon herbs and toss the ingredients together to give this salad such a contemporary taste. Lemon makes the salad fresh, and I love it! Next, you should pour mint leaves, basil, black pepper and salt on the top of salads. Now mix it well so everything is well coated. I like to add some extra mint on top, for garnishing.
I also love, how versatile this salad is! You can add more veggies like broccoli or corn, cooked pasta, and many more things.

Time- 10 Minutes
• 2 cup chickpeas, rinsed and drained
• 1 cup diced red onion
• 1 cup diced cucumber
• 1 cup diced red tomatoes
• 3 chopped green onions
• 1 diced green bell pepper
• ¼ cup chopped fresh mint and basil
• 3 tbsp olive oil
• 2 tbsp lemon juice
• 1/2 tsp salt (or to taste)
• 1/2 tsp black pepper
• Optional: 1 tsp red pepper flakes
1. Take a large bowl, mix veggies – tomatoes, cucumber, chickpeas, red onion, bell pepper; set it aside and let it rest for some time.
2. In another bowl, whisk with each other all the ingredients for the salad dressing and toss together with the salad. Mix in fresh mint, basil with salt and pepper as needed. Take in delight!
Once prepared, this recipe can be store in the fridge for about 2 days.
